Thai Red Curry Chicken with Rice and Broccoli

Tender chicken simmered in a Thai Red Curry sauce. Serve it up over rice and broccoli and dinner is ready in 5 minutes!

Kevin's Thai Red Curry Sauce

Ingredients


1 pouch of Kevin’s Natural Foods Thai Red Curry Sauce
2 tbsp olive oil
1 large onion, finely diced
1 lb chicken breasts, cut into bite-sized pieces
1/2 cup cilantro leaves roughly chopped
White rice, cauliflower rice, or quinoa to serve

Instructions

    In a large skillet, add olive oil and onion. Cook over medium heat until onions are soft and translucent, about 3 minutes, stirring from time to time.

    Add chicken pieces and brown them on medium-high heat. Add the garlic and sauce, bring to a boil then reduce heat to a simmer.

    Serve over rice, cauliflower rice, or quinoa if desired, and top with lots of cilantro.
