Kevin's Natural Foods Thai Coconut Sauce
1.5 lbs chicken breast, cut into 1 inch cubes
1 medium bell pepper, cut into strips
2 cups pumpkin, cubed
2 cups spinach
Cilantro and chopped cashews for garnish

Add chicken, bell pepper and pumpkin to slow cooker. Add sauce and stir.
If pumpkin is unavailable, butternut squash is a great substitute.

Set to high for 3 hours.

After slow cooker is finished stir all ingredients. Add washed spinach and stir until it cooks down.
Spinach will cook down slowly, so don’t walk away during this step!

Serve over Kevin’s Cauliflower Rice, top with cilantro and chopped cashews, and enjoy!
