Ingredients
Kevin's Natural Foods Roasted Garlic Chicken
½ red onion, sliced
4 cups arugula
Juice of ½ lemon
2 Tbsp olive oil
1 Tbsp balsamic vinegar
2 Tbsp pesto
4 slices of fresh mozzarella cheese
Soft ciabatta loaf (14-16 ounce), cut into 2 equal pieces

In a medium sized bowl, add sliced red onions, arugula, lemon juice, olive oil, and red wine vinegar. Toss to combine and set aside.

Cook Kevin’s Roasted Garlic Chicken according to package instructions.

Preheat the oven to broil on high. Line a small baking sheet with aluminum foil; place the bottom piece of the ciabatta bread on the baking sheet. Spread some pesto onto the bread, then add some of Kevin’s Roasted Garlic Chicken pieces, top with 2 slices of mozzarella cheese. Set the top piece of the ciabatta bread next to the bottom piece on the lined baking sheet. Repeat this process to make a second sandwich. Place under the broiler for about 3-5 minutes, until the cheese is completely melted. Remove from the oven.

To assemble the sandwiches, add the arugula and red onions on top of the melted mozzarella cheese; then, cover with the top piece of ciabatta bread and serve.
