Ingredients
Kevin's Natural Foods Honey Garlic Beef
4 medium portobello mushrooms
2 tbsp preferred cooking oil, divided
2 tsp everything bagel seasoning
1/2 large red bell pepper, chopped
2 celery ribs, chopped
2 cups undressed coleslaw
Cilantro, for garnish
1/4 cup peanuts or nut of choice
Instructions
-
1
Break beef strips apart by massaging pouch before opening. Cut open pouch, thoroughly drain and discard the beef broth. Remove beef strips from the pouch and separate in strips. Pour the Honey Garlic sauce into a bowl, until further instruction. Set aside the beef strips and sauce.
-
2
Heat oven to 400°F. Optional: Line a rimmed baking pan with a foil sheet or parchment paper.
-
3
Remove the mushroom stems by snapping off, and brush away any dirt. Brush both sides of mushrooms with cooking oil. Sprinkle the gill side of each mushroom cap with about 1/2 TSP everything bagel seasoning.
-
4
Bake the mushrooms, bottom side up, for 15 minutes. Once mushrooms are baked, pour any excess liquid into the Honey Garlic Sauce bowl.
Change It Up: Short of time? Slice portobello mushrooms, and place in a hot skillet without oil. Sweat the mushrooms for 3 minutes before adding the oil and vegetables.

Over MEDIUM-HIGH, heat the skillet for 1 minute. Add 1/2 TBSP cooking oil, red pepper, green onions, and celery, and stir-fry for 2 minutes. Push vegetables to the side, and add beef strip, heat for 1 minute. Add shredded cabbage, and stir for 20 seconds.
-
6
Reduce heat to LOW, pour Honey Garlic into skillet, and stir to combine the beef strips with vegetables and simmer for 1 minute.

Transfer baked mushrooms to a serving platter an and top with Honey Garlic Beef stir-fry. Sprinkle with peanuts, and chopped mint, cilantro, or basil. Enjoy!
