Ingredients
Kevin's Natural Foods Lemongrass Chicken
3 C broth (vegetable or chicken)
1 C pumpkin puree
1 bell pepper, diced
1 tbsp fresh ginger, peeled and grated
1 C bok choy, thinly sliced
2 scallions, sliced, separate white and green parts
1 C coconut milk
1 tbsp tamari or low-sodium soy sauce
Juice of 1 lime
Handful of cilantro, roughly chopped
Instructions

Break chicken up with hands in package, then as you add it to the pot in step two after draining the liquid, further break apart with fingers into bite sized-pieces

Add broth and pumpkin puree to medium pot, bring to boil (about 5 min)

Add pepper, grated ginger, bok choy, and white parts of scallions and simmer for 5 min

Add coconut milk, chicken, Kevin's sauce, bring back to boil and simmer 5-7 min

Stir in tamari and lime juice then turn off heat

Add in 1 tsp chili oil or garnish with sliced red chili for some added heat

Top with green parts of scallions and cilantro
