Ingredients
Kevin's Natural Foods Classic Taco Sauce
Kevin's Natural Foods All-Purpose Seasoning
1 LB Lean Ground Beef
3 Large Sweet Potatoes
3 TBSP Avocado Oil
2 Roma Tomatoes
1 Avocado
2 TBSP Green Onion
2 TBSP Cilantro, for garnish
1 Lime, for garnish
Instructions
-
1
Pre-heat your oven to 385 ºF. Peel the sweet potatoes, and thinly slice them using a mandolin or sharp knife.
If using a knife, make sure all the slices are the same thickness to allow for even cooking.
-
2
Add the sweet potatoes and avocado oil to a bowl, and sprinkle Kevin’s All-Purpose Seasoning generously to the sweet potatoes and toss to coat.
-
3
Cover a baking sheet with parchment paper and place the sweet potato “chips” on a baking sheet in a single layer. Bake chips for 10 minutes. Flip chips over and bake for an additional 10 minutes.

Now it’s time for the good stuff! While the chips are baking, heat a skillet on HIGH for 1 minute. Add your ground beef to the skillet and sprinkle with Kevin’s All-Purpose Seasoning. Cook for 4-5 minutes, stirring occasionally.

Next, add Kevin’s Classic Taco Sauce. Bring it to a simmer and then reduce the heat to LOW to keep it warm.

Grab your bowl and layer in your sweet potato chips. Next, add the ground beef and sauce, and top with diced tomatoes, sliced avocado, and green onions. Garnish with cilantro and a lime wedge. Enjoy!
