Ingredients
For the Steak Quesadillas:
16 oz. Kevin’s Chimichurri Beef
6-8 Corn Tortillas, warmed
1 ½ cups Shredded Mexican Cheese, or Mozzarella
2 tbsp. Olive Oil
For the Homemade Chimichurri Sauce: (Optional)
¼ cup Red Wine Vinegar
2 Dried Chili Peppers
½ cup Fresh Cilantro
½ cup Fresh Parsley
4 Garlic Cloves, peeled
1 large Shallot, peeled
¾ cup Olive Oil
Juice of 1 Lime
Salt & Black Pepper, to taste

To Make the Chimichurri Sauce: Combine all ingredients in a food processor. Pulse on HIGH speed 3-4 times, until well chopped. Season with salt and black pepper to taste.

To Make the Steak Quesadillas: In a large skillet over medium high heat, add 1 tbsp olive oil.

Drain the steak package and add to the skillet to sear 2-3 minutes on each side.

Add the chimichurri sauce package and let the steak simmer in the sauce for 3-4 minutes.

Transfer the steak to a plate to chop up into small pieces.

Layer the warmed tortillas with the chopped chimichurri steak and cheese. Fold over in half like a quesadilla and cook over medium heat with olive for 2-3 minutes on each side, until crispy.
